Oatmeal is one of my go-tos. I’m fairly certain I ate oatmeal for breakfast for six months straight. With all the recent hubbub on Pinterest surrounding overnight oats, I have fallen back into my oatmeal coma. The options are endless. However, I need protein with my coffee, and oatmeal alone doesn’t do much. I like plain jane oatmeal with almond milk, Truvia, and cinnamon, so I experimented a little and came up with protein oatmeal without needing protein powder.
They are light and fluffy, sweet and soul-warming. I am in love with this recipe and will probably eat it for another six months. It has 30g of protein in one bowl for less than 300 calories. Thehero in this recipe: liquid egg whites. I know you might be cringing right now. Sounds funky. They are going to be rubbery. But give it a try. Even my ultra picky boyfriend/husband (I’m really struggling with classifying him here) enjoys these and doesn’t complain about the texture.
This protein oatmeal takes under 3 minutes to make. Simply measure out your oatmeal, egg whites, and almond milk, stir, and pop in the microwave for 2 minutes. In comparison, it usually takes me between 8-10 minutes to make two eggs, two pieces of toast and few slices of turkey bacon. When I’m in a rush or just don’t feel like washing a skillet, protein oatmeal is my go-to breakfast.
Protein Oatmeal Recipe
- 1/2 cup quick oats
- 5 liquid egg whites
- 3 tbsp. almond milk
- Stevia or other artificial sweetener, to taste
- cinnamon, to taste
Combine all ingredients in microwave safe bowl.
Microwave on high for 2 minutes, removing bowl every 30-45 seconds to stir and fluff.
Don’t hesitate to change this up. It’s definitely a base recipe that could be used to make peanut butter or chocolate oatmeal. Add fruit or make it savory with cheese, spinach and onion. Sydnee likes hers with chocolate chips and PB2– I like it too, it’s just not a suitable early morning meal for me. I’d get a little too carried away with the chocolate chips.
