These cool and refreshing pineapple upside down popsicles are the perfect end of summer treat. Made with fresh frozen pineapple, milk, and maraschino cherry syrup, they are the cold version of a classic cake favorite.
In all honesty, I badly wanted to create another pumpkin recipe to share, but I figured with my recent Layered Pumpkin Cheesecake Recipe and an upcoming pumpkin surprise next Monday, I better not overwhelm you guys with pumpkin.
I seriously have a pumpkin problem. I noted on my Facebook Page that I need a pumpkin intervention. Did you know they make pumpkin cream cheese, pumpkin bagels, pumpkin marshmallows, and pumpkin pie spice tea? My favorites every year are pumpkin pie spice coffee creamer and pumpkin pie spice peanut butter. And every year I spiral deeper into pumpkin madness.

This post is about some really yummy pineapple upside down popsicles. One of the Sydnee’s favorite treats is homemade popsicles. She loves to help make them and then wants one every morning right after breakfast, in which I become the big bad mom and insist she has to wait until after noon.
These are definitely a healthier popsicle than my Chocolate Creamsicles, and I was little concerned she was going to turn her nose up at them because I didn’t add any additional sugar, other than the small amount of maraschino cherry syrup. To my surprise, she loved them and was eager to ask for a second one after devouring the first.
I will let you decide if they are going to be one of your summer staple popsicles, and then ask that you let me know via social media. Come and tell me what you think. Do they need something else? Some cake batter for example?
