This Fully Loaded Broccoli Salad is packed with delicious and healthy ingredients. You will taste everything from toasted pecans to sharp cheddar cheese, and dried cranberries to bacon. And it’s topped with a sweet and tangy dressing made with Greek Yogurt.
I’m typically the guest that brings sweets to a potluck. The Best Chocolate Chip Cookies, Oreo Brownie Cupcakes, pies, etc. I am known for my sweet tooth and have no problem sharing my delightful creations with others. But for our annual Memorial Day get-together this year, I wanted to wow the in-laws with a surprise.
That, and I have been extremely busy and needed to make something quick. I thought being out of school for summer would give me tons of spare time, but it’s been quite the opposite. It seems like there is something to do every hour of every day, which is why I use these Free Printables to organize and plan out my days.
Monday morning came a lot faster than I expected, and as usual, I still hadn’t been to the grocery store. In fact, I hadn’t even fully planned out my dish idea. I knew I wanted to make a cold, summery salad but was undecided on the list of ingredients that would accompany it.
So let me give you a rundown of what my typical grocery store visit looks like, and then you might understand my scrambled thought process a little better.
I leave my house before checking the pantry, giving myself the benefit of the doubt that I know what’s in there.
I drive four blocks (pathetic, I know) to the grocery store. Upon entering, my first stop is always the produce section. I pick out two to three fruit items depending on my current craving, then head over to the veggies.
I always grab some form of carrots, some broccoli, spinach, a cucumber, an onion, and maybe some herbs if I already have an idea.
Afterwards, I meander around the dairy section and grab the usuals: milk for Sydnee, Almond Milk for me, at least two varieties of cheese, cottage cheese, and a Greek Yogurt.
From there I try to make as a few stops through the interior aisles as possible. I typically hit up spices, nuts– which also happen to be in the candy aisle at my local grocery store, and canned fruits and vegetables.
With a half-full cart in tow, I go check out, head home, and realize I already have dried cranberries, and didn’t get the vinegar I wanted. And then it’s time to start concocting something from my new variety of miscellaneous ingredients.
I’m certain I look like a mad scientist, ripping ingredients from the pantry and holding them high above my head in a moment of “Ah-Ha!” With this loaded broccoli salad, it was a lot of “Ah-Ha” moments and a few “ehh, let’s give it a try” moments. And it worked out perfectly.
This salad really encompasses the summer and fresh ingredients that compliment each other with their sweet and salty flavors. The bacon and toasted pecans are perfectly paired with sweet and tart Granny Smith Apples. The honey and apple cider vinegar in the creamy dressing brings the whole thing together.
It worked out beautifully, and everyone was very impressed with my healthy, non-sweet dish. I only had about one serving to bring home after the get-together.
