I’m a HUGE fan of all varieties of enchiladas, but these Cream Cheese Chicken Enchiladas are by far a household favorite. This is Chris’s recipe. I credit this recipe for making me fall deeply in love with him. These are on a higher level of cheesy, previously untouched by other enchilada recipes.
But as you may have guessed, with all that cheese and the baked flour tortillas, the aftermath can be a bit of a nightmare. In the past, I’ve spent at least 15 minutes scrubbing and scraping crusted on cheese from the casserole dish. Not my idea of a good time.

I have long relied on and trusted Scotch-Brite sponges to clean up my post-baking and post-dinner kitchen catastrophes. They say you should only trust a messy baker, right? Well, I rank among the messiest.
These Cream Cheese Chicken Enchiladas are a mess from start to finish. Start by cooking the chicken in a frying pan with a little olive oil on medium heat. When it’s reached 165ºF internally, remove the chicken and set it aside on a cutting board to be shredded once it’s cooled.
Meanwhile, grab a large bowl to make the ooey-gooey cheesy filings that will have all your senses on high alert. Add in cream cheese, sour cream, 1 cup shredded cheddar, cream of chicken soup, onion, tomato, jalapenos, salt, and pepper. Using a fork, mix the filling until all ingredients are evenly distributed. You may have some chunks of cream cheese throughout, but that’s okay.
Now it’s time to get down with some chicken shredding. I find it’s easiest to use two forks. Secure the chicken with one fork and use the other to shred the chicken by pulling it through the meat. If there are still large chunks, you can always use your fingers to pull them into smaller shreds.
Not only did I use my Scotch-Brite Scrubbing Dish Cloth to clean up the dishes after dinner, I also used it to wipe down my glass cutting board after shredding the chicken. It has the scrubbing power necessary to take away the grease and grime but won’t scratch any surface. And when I’m done, I can just throw the dish cloths in the washing machine. They are fully washable, reusable and sturdy.
After you shred the chicken, add it to the bowl with the filling, and stir to combine. Now grab 7-8 large flour tortillas and your casserole dish. Scoop about 1/2-3/4 cups of the filling into each tortilla, fold in the ends and roll up. Place all of the enchiladas in your casserole dish so they are touching. Now take remaining filling and spread it evenly over the top of the enchiladas. Easy-peasy, right?
Sprinkle remaining cheddar cheese over the top, and bake at 400ºF for 30-35 minutes.
