Between my daughter teething and starting a new term at school, dinner has been a huge rush lately. The last thing I want to do is heat up a frozen pizza, but it hasn’t been out of the question lately. On top of time constraints, my oldest seems to only be getting worse about being a picky eater, so I am trying to accommodate to her [kinda]. She’s not eating cereal or toaster pastries for dinner, but we haven’t been making any exotic foods either.
Some battles are worth it, and some aren’t. This child cries, whines, throws a tantrum, goes without eating, and takes 4 hours to eat a small plate of food if she doesn’t like it. These days, that’s just about anything except ramen noodles. So, my theory is: pick and choose your battles. If I don’t I’ll be gray long before I’m thirty and botox will be a necessity by next summer.
This not so diet friendly meal pleased my noodles only eater. Hawaiian Rolls are a favorite in our house when it comes to bread items, so it was guaranteed that the bbq chicken would be put on them. The cheese is the icing on this sliders! I know my jokes are bad right now; I apologize. I’m running on coffee and the adrenaline of a baby who cried all day.
The only issue I have with this recipe is that it uses shredded chicken. If I had to name my top three methods of torture, shredding chicken would be near the top. I hate it! But, Amazon never disappoints me while looking for solutions to all my life problems. Stressed? Shop on Amazon! Anyways, I found this meat shredded! It will be at my house in the next two days.
